Cottage Cheese Pancakes

½ cup cottage cheese
½ cup oats
1/3 cup egg whites (2 eggs)
1 tsp vanilla (optional)
1 tbsp peanut butter
Mix cottage cheese and egg whites in a blender until combined. Add oats and vanilla and blend until smooth.
Coat a small skillet with cooking spray and heat to medium.
Pour batter in the pan and cook until golden brown. Flip and cook the other side until golden brown.
Spread 1 tbsp of peanut butter over the pancake. Try adding a few sliced strawberries!
